The Usubagata knife is a traditional Japanese, thin-bladed knife specifically designed for precise vegetable preparation, such as slicing, dicing, mincing, and delicate tasks like katsuramuki (rotary peeling). It is characterized by its straight, cleaver-esque edge, making it ideal for clean, shallow cuts that minimize cell damage, oxidation, and flavor change in raw vegetables.
